What Is Rice Syrup?
Rice syrup, also known as rice malt syrup or Korean rice syrup, is a natural liquid sweetener made from rice. Natural, non-GMO enzymes break the rice starch down into sugars, mainly maltose and glucose, which are then filtered and concentrated into a smooth syrup. Rice syrup is naturally fructose-free, gluten-free and allergen-friendly, which makes it a popular clean-label alternative to refined sugar, corn syrup and tapioca syrup.
The DE (dextrose equivalent) of a rice syrup describes how far the starch has been converted: lower-DE syrups are less sweet with more body, while higher-DE syrups are sweeter and more fluid. Agricoze produces Orycoze™ rice syrup across the full range, from 28 DE to 60 DE.
